Ingredients
Five zucchinis, scraped, cut lengthwise, and cut into thick half moons.
Approximately 10 small potatoes peeled and quartered
One large red onion sliced
Two or three cloves’ garlic sliced
One bunch parsley finely chopped
One can 14 ounces crushed or ground tomatoes
1 tablespoon sea salt
Two pinches ground black pepper or to taste
One cup olive oil
Two or three cans of water
