Lee Crosby, is a plant-based Registered Dietitian at the Physicians Committee for Responsible Medicine who helps patients lose weight and prevent and reverse many chronic diseases. She is also the creator of Veggie Quest, a plant-based blog full of healthy recipes, cooking hacks, grocery saving tips, and other helpful information for getting you started on a whole food, plant based diet. Lee is also a former classmate of mine and someone who I would not have been able to get through nutrition school without!

In this episode, Lee talks about some of the consequences (and benefits) of low carb / ketogenic diets as well as the possible outcomes of a vegan ketogenic diet. Lee also gives some tips for those who are thinking of going into the field of nutrition and dietetics and what a typical day looks like for an RD that works at PCRM / Barnard Medical Center in Washington, D.C.
