Cast Iron Cookware: Why everyone should at least own one piece

I'm going to be talking about cast iron cookware and why I think everyone should own at least one piece. It can be a cast iron skillet, dutch oven, or even a flat top griddle. At the end of the episode, I'm going to give you my recipe for HOT WATER CORNBREAD which you can make in your cast iron skillet.
Homemade Cornbread

INGREDIENTS


1 cup white or yellow cornmeal

1 ½ cups all purpose flour

1 teaspoon baking powder

⅓ cup sugar

1 whole egg

2 tablespoons vegetable oil, for cast iron skillet

¼ cup vegetable cooking oil

¾ cup Hot Water


Preheat oven to 350 degrees

In your cast iron skillet pour in the 2 tablespoons of vegetable oil and place the skillet in the oven

While the skillet is heating up in the oven prepare your cornbread batter

In a large mixing bowl combine the flour, cornmeal, baking powder and sugar

Whisk these ingredients to combine

Add your egg, ¼ cup vegetable oil and ½ cup of hot water

Stir until fully combined, there will be lumps but that’s fine.

Remove the cast iron skillet from the oven and immediately pour your batter into your cast iron skillet and place back into the oven.

Bake for 25-30 minutes or until the top is a nice golden brown

Rub the top of your baked cornbread with butter

Slice and serve while still hot.
