Hannah Bailey, a Ph. D. student in the Stein Monogastric Nutrition Laboratory, discusses an experiment she conducted to determine the protein digestibility corrected amino acid score (PDCAAS) and the digestible indispensable amino acid score (DIAAS) for raw and roasted pistachio nuts fed to growing pigs. Another objective of this study was to assess the effect of roasting on these measurements of protein quality.
