The Japanese cuisine, or Washoku in Australia, has seen a significant change over the course of few decades. We look back at history  and future of Japanese cuisine in Australia with one of the first generation chef,  Hideo Dekura.

オーストラリアにおいて目まぐるしく変化し続けてきた日本食文化。長年に渡り日本食文化の普及に携わってきた、第1世代シェフの一人である出倉秀男氏に、これまでの歴史、そして今後の展開について聞いてみました。
