For years, plant-based eaters have downplayed the importance of focusing on protein, claiming to get plenty without trying. But recently, as longevity researchers have highlighted the importance of lean muscle as we age, protein has become more deserving of our attention. Matt Tullman has managed to gain more than 15 pounds of muscle in the past six months, primarily by eating more plant-based protein, and of course, shifting his energies from running to lifting weights.
