Rebecca's favorite recipe looks perfect and simple!
   
Tuscan Minestrone Soup
 
1 c. sliced carrots
1/2 c chopped celery
1 c chopped onion
2 cloves minced garlic
2 T olive oil
15 oz can black beans
15 oz can cannellini beans
32 oz chicken broth
1/2 t. thyme
 
1) heat oil on medium/high heat. Add vegetables and garlic. Cook 4-5 minutes.
2) Stir in remaining ingredients and bring to boil.
3) Turn heat down to medium/low and simmer 10-12 minutes.
4) Serve with crusty bread.
