Today’s guest is a true bread artisan, a master bread baker, a trained pastry chef, avid golfer, recipe consultant, chef instructor, and such a nice man! Hailing from north Germany, Chef Thor Pannek talks about his childhood and his journey to become a bread apprentice, a bit later than typically done. In this episode we talk about the unglamorous side of bakeries, wonderful organic food markets, the mathematics involved in baking, and some fun treasured childhood pantry staples from Germany (how do I get a box of Miracoli?!). I really enjoyed hearing about his food journey and I hope you will too.
