Pop filters clean up the sound before you even edit it. They protect your mic from popping sounds, or rather, fast-moving air called plosives. Plosives are created from popping Ps when speaking close to your mic. Pop filters come in a variety of forms and are typically nylon or metal mesh screens that sit between you and the mic. Foam windscreens also slide on the mic itself and are great for omnidirectional recording.
