Peach Spritz
2 oz gin (floral gin is best)
1/2 oz dry vermouth
fresh herbs (mint, basil, and thyme)
peaches (fresh or canned)
soda water
Add spirits, a peach slice, and herbs to a mixing glass and muddle (you can add some syrup from the canned peaches or squeeze some fresh juice in to make a sweeter drink). Add ice and mix. Strain into a tall chilled glass filled with ice. Top off with soda water and garnish with herbs and peach slices.
