"Stuck in My Happy Place"

4 1/2 oz Lime Juice

1 oz Rhum Clement VSOP

1 oz Appleton Estate Extra or Coruba Dark Jamaican Rum

1/2 oz Orange Curacao

1/2 oz Latitude 29 Formula Orgeat

3/4 oz Simple Syrup

3/4 oz Vegan Gelatin

1/4 oz Fresh Mint (pulverized)

1 Lime (slice in half, remove meat.

Cocktail Sphere:

Whisk together 1/4 oz gelatin and 1 oz lime juice in a large heat-safe mixing bowl and let sit so the gelatin can bloom

Heat 1/2 oz lime juice in a pot until just barely simmering, remove and pour into the bowl with the gelatin mix and whisk until combined.

Whisk in the rums, curacao, orgeat syrup, and pour the mixture into sphere molds on a baking sheet. Set in refrigerator for 4-8 hours until set.

Gummy Mint Garnish:

Whisk together 1/4 oz gelatin and 1 oz lime juice in a large heat-safe mixing bowl and let sit so the gelatin can bloom.

Heat 1/2 oz lime juice in a pot until just barely simmering, remove, and pour into the bowl with the gelatin mix and whisk until combined.

Whisk in 1/4 oz simple syrup, mint, and pour the mixture into leaf molds on a baking sheet. Set in refrigerator for 4-8 hours until set.

Gummy Lime Slice

Whisk together 1/4 oz gelatin and 1 oz lime juice in a large heat-safe mixing bowl and let sit so the gelatin can bloom.

Heat 1/2 oz lime juice in a pot until just barely simmering, remove, and pour into the bowl with the gelatin mix and whisk until combined.

Whisk in 1/4 oz simple syrup and pour the mixture into lime peel halves on a baking sheet. Set in refrigerator for 4-8 hours until set.

Serving: 
Place set sphere in glass, using toothpicks, garnish with gelatin mint sprig and lime. Serve with a spoon. ENjoy happiness without the risk of melting.
