Today’s episode is a deep dive into the history of Polly’s Pancake Parlor with Kathie Cote. Kathie is the third generation owner of Polly’s. Polly’s Pancake Parlor got its start in 1938 when Kathie’s grandparents came up with a way to sell more of their maple products during the depression. They opened a tearoom on the farm and began serving amazing pancakes to locals.

Each generation has had their mark on the business. Nancy, Kathie’s mother, took over the business from her parents and began to expand its footprint. Neither Nancy or her husband were farmers, so they decided to abandon the farm side of the business. Instead they threw their weight into pancakes. Business boomed!

When Kathie took over, the business was in need of some TLC. The building wasn’t built to withstand cold winters without pipes freezing. As a result, the business was largely seasonal. Kathie made her mark on the business by making the difficult emotional decision to tear down the original building and start over. In this process they were able to grow the size of the building in a safe way that would be able to keep patrons happy year round.

COVID has brought many challenges to the business. Today seating is limited, but because they expanded the size of the building they are still able to serve a decent crowd. They also have a thriving online business where you can order pancake mixes and various maple products. All are locally sourced in New Hampshire.
