Chilli Cabbage
Here’s a beautiful dish that is full of flavour and the all-important fibre.
3-4 rashers bacon
1 small head green cabbage
1-2 tbsps butter
1 red chilli, de-seeded and sliced thinly
1 ½ tsps salt
½ tsp freshly ground black pepper
¼ cup cream or dollop of sour cream 

Dice bacon and saute in a pan.
Cut the cabbage in half and, with the cut-side down, slice it as thinly as possible, discarding the core.
Add butter to bacon and add in the shredded cabbage, chilli, salt and pepper and saute for 5-7 minutes until the cabbage is tender. Pour in a splash of cream, taste and season with more salt and pepper. Serve and enjoy!
