Baked chicken & peaches
This is an oldie but a goodie and perfect for when the golden queens are in season.
Serves 4
1 onion, sliced thinly
8 chicken drums, slashed a few times on each
3-4 golden queen peaches, halved and de-stoned
8 tsp cranberry jelly (or any fruit jelly really)
Salt & pepper to season
Olive oil to drizzle
¼ cup water

Heat oven to 220.
Scatter an oven dish with onion. Lay drums and peach halves on top in a single layer. Spoon one teaspoon jelly onto each drum stick. Drizzle over olive oil and season. Pour water around them.
Bake for 35-45 minutes, basting at 20 minutes, until chicken is golden and cooked through.
Serve chicken with peaches, onions and pan juices, with salad. Enjoy
