Jen Urich didn’t just start a new café. She started a new café out of an upcycled shipping container in a public park, while growing many of her own herbs and vegetables. Needless to say, starting the first shipping container restaurant in Western Pennsylvania presented numerous challenges and obstacles, not the least of which was finding the right location and meeting the stringent requirements of the health department. Jen and her husband, who tackled much of retrofitting and design, often ran into difficulties trying to apply the rigid rules to their tiny, non-traditional space. Jen didn’t take “no” for an answer, and after significant effort, extensive renovations, and numerous conversations and negotiations, she was finally able to bring her dream to life.
Several years earlier, Jen and her family stumbled upon a beautiful 5-acre property with a 200-year-old farmhouse that was in dire need of a makeover. As a landscaper who loved working outdoors, she was itching to grow perennials on her newly acquired land, which hadn’t served as a working farm in more than 50 years. Her experimentation with farming eventually led to the cultivation of various types of rare and difficult-to-grow produce that she sold to local restaurateurs. Ultimately, Jen’s experiences as a first-generation farmer, restaurant supplier, and baker culminated into her vision – an environmentally sustainable café with locally sourced and seasonal ingredients, which she aptly named Farmer x Baker.
