Jay Speranza is Pauly's favorite chef in Rochester because of his ability to check all the boxes.  What does that mean?  Pauly thinks that Jay can serve high end food that the hardcore foodies can enjoy while also not alienating his "meat & potatoes" parents when they come in.  

Jay's story is quintessential in the way he experience home cooking as a child, fell in love with the industry as a young adult, was party of a highly collaborative team in the founding of Tony D's, and has now spent several years as a solo entrepreneur in the restaurant space.
