The big trend now, and one I applaud, is to go gluten free! Gluten, which is in all wheat products, is bad, especially since modern wheat has been so modified to be overloaded with the stuff, which has all sorts of bad effects. It can distress your gut lining, and will, if you eat enough- and if you are ‘gluten sensitive’, which most people are these days- it can cause leaky gut.This is where food particles can gain access to your bloodstream, and cause you to get autoimmune diseases- little things like arthritis, inflammatory bowel disease, heart disease and cancer, just to name a few… You don’t want leaky gut, and so that alone is a good reason to avoid gluten!BUT- don’t just blithely run through the Gluten Free section of the grocery (which has become very prevalent as of late), grabbing armfuls of gluten free cookies, cakes, and pastries! Because, well- they are still cookies, cakes, and sugar loaded pastries!! They are still highly glycemic, and very, very unhealthy, despite being free of gluten.What you should be doing, is to try to eliminate your addiction to flour, to the idea of the “sandwich”- to bread itself! Even if you would eliminate all modern wheat itself, and go back to the Biblical diet of spelt and other ancient grains- while you would be slightly ‘better off’ compared to modern diets- your diet would still be substandard for human optimization of health and wellness. And, you would still be subject to contracting autoimmune disease, the diseases of modern civilization to which our paleo forebears were immune!Perhaps you might stave off obesity, if you ran marathons in addition to eating your ancient breads, and helped to build pyramids and hunted and gathered all day long… But would it be worth it, to stave off fat gain by being the equivalent of a biblical slave??NO, I don’t think so. You need to not only eliminate gluten- you need to by and large eliminate not only cookies, cakes and pastries, pasta and cereal and the rest:You need to eliminate BREAD!I know this is hard, really hard- bread is best! For the maximum in health benefits, you should have a diet that is without bread entirely- gluten free, sprouted grain, or any alternative. You will be leaner, healthier, far less prone to gut issues, and overall a far superior person, both mentally and physically, to what you would be while consuming such grain products! Without grains, gluten free or not- you will be a better person, physically, mentally, and emotionally- than what you would be with consuming them!If that is not enough of a reason for you to give up grains entirely, I don’t know what is. Here is the ad campaign for giving up bread and other such foods:“Be Healthier, Leaner, and Free of Disease! Just Give up BREAD and other grain products- results GUARANTEED!!”Crazy as that sounds, it is completely true. Grains are THAT BAD! But do not immediately run to gluten free versions of the grains you grew up with! This is my point in all of this- they might be a “somewhat better”, in that they don’t compromise your gut- but they still spike your blood sugar, and do all the other things that high grain consumption does to us all!RE”grainwash” yourself! Eat your grass-fed hamburgers on the grill with an onion, lettuce, and tomato on the top- without any bun and with a knife and fork! Eat your morning pastured eggs without toast, gluten free or otherwise. I make little “pizzas” with portobello mushroom caps, split in half and loaded with pizza sauce, cheese and sausage- they are better without the crust! I make sandwiches with onion slices, between which I place roast beef or pork, mustard and tomato and bacon…These substitutions actually make the food taste better! More succulent, more tasty- the bun, if you think about it, tastes like nothing.Resolve to eliminate these “little slices of nothing”, nothing except blood sugar spikes, and inte
