Kyle decides to take an Italian Wedding Soup recipe and adapt it to plant-based. See recipe below:
Ingredients:
1 cup onions chopped
1 cup celery chopped
1 cup carrots chopped
3 garlic cloves minced
7 cups vegetable broth
1 can cannellini beans
1/4 cup fresh dill chopped
1 tsp oregano
Salt & pepper to taste
1/2 cup acini di pepe (or small pasta is your choice)
2 cups fresh spinach chopped
Aldi vegan meatballs (optional)
Instructions:
Sautée onions, carrots, celery and garlic until soft. Add vegetable broth, beans, dill, oregano, salt and pepper. Simmer for 10 minutes. Add pasta and cook until it is tender. Add spinach and cook for 2 minutes. Cook Aldi vegan meatballs in air fryer or oven according to package instructions. Add meatballs to your bowl as you eat the soup. Adding them to the pot will render them too soggy. This soup is just as delicious (and more healthy) without the meatballs. Enjoy!
