The distillery has won a number of awards for its efforts in sustainability with Will using innovative practices to keep carbon neutral. His efforts on sustainability are truly remarkable and its why he is considered a thought leader.

From sourcing wild botanicals within a mile of the distillery to feeding waste to giving liquid waste to local digester plants to create fuel, Will really meticulously thinks of every step in his process.
