Something light and fluffy to cheer us all up. This past weekend was Mother’s Day in the UK. George, Charlotte and Louis  were busy little bees ahead of Mother’s Day.  Not only had they made cards in honour of the late Princess Diana (Granny Diana)  but they were given credit for baking and decorating a Mother’s Day cake for mom Kate.

Photos of the Victoria Sponge Cake posted by William and Kate,  show that it was lovingly decorated with cream and smarties, and with pipe-cleaner hearts pushed into the top. 

Anyway, all this got me thinking about the history of the humble (or not) Victoria Sponge Cake. Hear what I learned.
