"Listen, I have a confession. I’m obsessed with cooking shows. I know, it sounds crazy, you would have never guessed it, but it’s true (is it clear that this is sarcastic? no? cool). After my last terrible break up I watched Jamie Oliver every single night to lull myself to sleep every night for months. In my worst times, it’s been the only content that cheers me up and encourages me to plow forward. I guess, this is one of the major reasons why I became addicted to making cooking content. And, as you can imagine, it’s always been a real dream of mine… like a pie in the sky… birthday candle wish… totally north star dream to host a show for The Food Network. Which is why when Genius Kitchen (Food Network’s New Digital Channel) asked me to do a show for them I was mentally doing the happy dance, while acting very cool and collected, as you do.


Though the concept itself was set in stone they gave me the freedom to create any recipes within the guidelines that I wanted, which was a real score. The goal of the show is to provide you guys with really solid recipes to help you get through some of the more popular current diets without falling off the bandwagon due to cravings. As I tested recipes for Keto, Whole 30 and The Mediterranean Diet I discovered little tricks here and there that I really think make huge differences in the final results. For instance… I NEVER used to eat spaghetti squash as “pasta” since it usually gets so sad and watery when you toss the squash in the sauce, BUT if you scrape out the squash and give it a second roast, all of that extra liquid evaporates and you’re left with a very nutritious and pretty excellent replacement! I also figured out little hacks for making cauliflower crust for pizza pickupable and discovered that you can, in fact, make keto friendly pancakes.


We shot the entire season in THREE DAYS, so it was a whirlwind and I think I sort of blacked out, but I’m incredibly thankful to the epic team Food Network put together and to my friends who helped me recipe test, made me look good and were just generally supportive.
