Slatt's Quince Tart


Squeeze three lemons through a sieve into a glass bowl. Peel the quinces (around four). You can be rough (don't panic if there's a little skin left on). Slice quinces of quince away from the core and toss immediately in the lemon juice (so they don't go too brown). Add 50-80g of sugar (depending on how many quinces). Cook in the microwave until quinces are tender to the knife (12-15minutes - check as you go). Mix with a wooden spoon after 5 minutes. 


Bake a blind tart shell - one you are comfortable with (ie you favourite store bought or home made tart pastry). Drain the cooked quinces and layer the quince pieces on the base of the pastry, packing them tightly. 


Bake again for 15 minutes at 180 degrees C.
