Clemmie Donohoe’s Prawn Rolls with Lemon Mayo
INGREDIENTS
Good fresh bread roles
Prawns (peeled and deveined) then cut in half
2-3 celery sticks
Chives
Tarragon
Lettuce

For the lemon mayo
2 egg yolks
Juice from one and a half lemons
Neutral oil (like grape seed oil)
1 tbsp Dijon mustard
Good sea salt flakes
Method
Add the egg yolks into a food processor followed by lemon juice, dijon and salt. Whizz these ingredients up and then slowly add the oil a little at a time
Blend until thickened.

METHOD
Chop the herbs and the celery (not too finely for the celery, you want a bit of crunch). Chuck everything in a bowl. Add a generous amount of cracked pepper and salt. Stuff in the roll with the lettuce. Too easy!

Split the rolls and fill with lettuce and the prawn mix
