Moroccan Chicken
2 tsps each cinnamon, cumin, coriander
½ tsp cayenne pepper
½ cup raisins
2 tbs each olive oil, honey
1 1/3 lbs boneless chicken breast, bite sized
3 crushed garlic cloves
1 medium chopped yellow onion
1 bay leaf
1 tsp grated ginger root
1 cup chicken broth
2 cup each canned tomatoes, canned chick peas
¾ cup kalamata olives, halved

Mix cinnamon, coriander, cumin, cayenne pepper. Dredge chicken in mixture. In skillet, heat oil over medium heat. Add chicken; sautee until brown, turning once. Remove chicken. Add onion to skillet; sautee 3 min. Add garlic, ginger, broth; Add garlic, ginger, broth; sautee 5 min. Add remaining ingredients and chicken. Cover, simmer 30 minutes. Serve.
