In this episode, Ian sits down and talks to Maple Syrup expert Tom Shaw. Shaw Catering / the Shaw Family Farm has a very rich history. Located in Oro-Medonte, Ontario, the original farm was purchased in 1858 as a pig farm and to harvest firewood, and it has been in the family ever since. The first maple syrup was produced on the farm in 1904. Tom Shaw has a diploma of agriculture from the University of Guelph, and is a fifth generation syrup maker.
