Salt is a remarkable thing. It’s an essential element in the diet of not only humans but also, in animals and some plants.  It is by far one of the most effective and most widely used of all food preservatives. It has industrial, medical and other uses besides just in the food we eat.  



You might think of salt as nothing more than the inexpensive stuff that tastes good sprinkled on French fries and popcorn, but it’s more than just a seasoning .  It has a long history as a highly prized substance. All through history, the availability of salt has been pivotal to civilization.
