goodbye/fun facts....national truffle day...not the edible fungus...but the decadent chocolate treat!  Traditionally, chocolatiers make this sweet confection with a chocolate ganache center coated in chocolate, icing, cocoa powder, chopped nuts, or coconut. invented by Louis Dufour in Chambray, France in 1895. This was as a result of an experiment whereby he was trying to come up with a very delicious Christmas treat. a few years later  in 1902, his relative, Antoine Dufour, took the recipe to England and opened up a Chocolate Shop specializing in truffles.  The Chocolate Shop called Prestat is stil in operation today in picadilly square
