goodbye/fun facts....this treat originated in Victorian England (17th century), where it was sometimes known as Lemon Chester Pudding...and the bottom part isn't that hard to make...it's the top part that's hard to master. we know it today as lemon meringue pie...and the meringue is the hardest part of the pie to make...if you beat the egg whites too much the meringue turns spongy...not enough and it's soupy...celebrity chefs say the secret is using simple syrup...and you must temper the egg whites!
